The asparagus of the woods is formed in carpet in the slopes, meadows, light woods in almost all France up to 1200 m of altitude. It is harvested between April and June. It is a bulbous plant with linear leaves that disappear almost at flowering leaving a rather large floral stem.
At the beginning about fifty flower buds are organized in ear, as and when it emerges, which begins with its base, each flower develops a petiole that evolves its ear into a slender cluster. Its flower is greenish white with six petals and six stamens.
Asparagus is rich in potassium, magnesium and vitamins B and C. It is very low in calories. It has antioxidant properties. It can have effects on certain diseases (cardiovascular, intestinal transit, water retention).
