Description

Open, the coulemelle looks like an umbrella, it is quite common on well-drained and siliceous soils. It can be found solitary, gregarious or in witch’s circles in pastures, in open undergrowth or clearings. Overall, it is widespread in temperate regions.

Usually early from July to October, it is found until Christmas.

The hat is oval then convex and finally widely spread in umbrella, from 10 to 30 cm in diameter, surmounted by a nipple, with a dry cuticle, gray-red, covered with brown scales, denser towards the center. The blades are white, tight, soft.

The foot, 15 to 40 cm high, is slender, hollow, bulbous at the base, tabby brown and increasingly scaled towards the base; it is provided with a double ring, whitish and sliding. The foot is fibrous, which makes it inedible.

The flesh is white, soft, with a pleasant fruity smell and flavor.

Coulemelle can be eaten fresh, canned or frozen.
