CULTIVATED IN AUVERGNE
This gilled mushroom has a cap ranging from 7 to 14 cm in diameter, gray-brown or blackish but often much lighter, eccentric, initially convex then flattened, resembling an oyster shell. Its stalk measures 1 to 2 cm, white and firm but quickly becoming elastic.
Pleurotus mushrooms are cultivated year-round on a sterile substrate of finely shredded, aerated, and moistened plant waste such as straw, ensuring optimal uniformity. The substrate is pasteurized, compacted, and packaged into "block" form. After incubation, these blocks are transferred to cultivation rooms.
Today, it is possible to cultivate pleurotus mushrooms at home using large bags of sawdust or with ready-to-grow kits. Like many mushrooms, they possess antimicrobial, antifungal properties, and are rich in antioxidants.
Pleurotus mushrooms can be enjoyed fresh, dried, or frozen.
