This fresh mushroom consists of a hat from light to dark brown and a fleshy foot.
The fresh cep occupies a prominent place in French gastronomy: Young, it is then called champagne cork, it remains white and firm. Adult, it is then called old, you can remove the foam, which, if it is edible, becomes spongy when cooked.
