Description

Early, from March to May, the March mushroom grows mainly in the mountains among snow patches, under conifers but also under beeches, by 2 or 3 individuals or in vast colonies where it hides under the ground, moss, leaves and needles.

Depending on the region it is also called «spring coal».

Its hat of 6 to 15 cm is solid, white in the center then pearl gray on the outside often waxy or viscous. Its lamellae are spaced and uneven, white or pale pink. Its foot is robust, slightly attenuated at the base, most often curved, full, firm, blackish gray at the top. Its white flesh is thick, firm and fibrous in the foot; its sweet flavor. This mushroom is an excellent edible, fleshy and of pleasant consistency.

The charcoal can be eaten fresh, canned or frozen.
