Description

In June and from late July to October, this chanterelle club grows under conifers rather in the mountains on limestone soil.

Depending on the region it is also called «purple chanterelle».

We recognize it with ease thanks to its beautiful lilac color, its fleshy hat, truncated at the top, its wrinkled surface, pleated by branched veins. Its hat of 4 to 8 cm in diameter is cylindrical, often deformed of color ranging from dark lilac to yellowish, khaki. Its foot of 4 to 8 cm, often lateral, thick, full, hard, dark purple, pale to whitish. Its thick, spongy, marbled, very white flesh is always firm; its flavor is sweet, sometimes a little bitter. It is an edible very appreciated for its white and thick flesh, a little crunchy.

Chanterelle club can be eaten fresh, dried, canned and frozen.
