Description

Caesar's mushroom or oronge is an excellent edible, the best mushroom according to many amateurs. The hat is red-orange, with ribbed edges, the foot and the lamellae are yellow. The volve, very white and membranous. The oronge particularly appreciates Mediterranean siliceous soils.

Young this mushroom comes in the form of an egg. More mature, its hat goes from 8 to 15-20 cm, bright orange red, shiny, often covered with large shreds of the volve, white. Its flesh is firm, white, yellow under the cuticle. The blades are tight, light golden yellow. The 8 to 15 cm foot is sturdy, straight or slightly curved, golden yellow.

Caesar's mushroom grows from mid-September to mid-November under the deciduous trees (holm oaks, cork oaks, chestnuts in particular) of the Mediterranean regions. This mushroom is also relatively common in Périgord where it is harvested in August.

Caesar's mushroom is the only amanita that can be consumed raw without risk.
